Summer is here! This Vietnamese Shrimp Spring Roll is the perfect healthy summer dish! I love how refreshing it tastes! I have tried a couple spring roll recipes and had some failures making them. But here I am going to show you how to make them perfectly every time!
Ingredients:
10-15 shrimp
sliced cucumber
shredded carrot
sliced green peppers
spring roll wrappers
1 Tbsp olive oil
1 Tbsp garlic powder
salt
For the peanut sauce:
3/4 Cup of peanut butter
1/3 Cup of water
3 Tbsp of Hoisin sauce
2 Tbsp of lime juice
2 Tbsp of soy sauce
1 tsp of garlic powder
1 tsp of sesame oil
1 tsp of chile pepper sauce
Directions:
The Spring Roll
1. Marinate the shrimp with 1/4 tsp of salt and 1 Tbsp of garlic powder.
2. Heat the stove (always hot pan cold oil ) and put 1 Tbsp of olive oil in the pot. Put the shrimp in and completely cook the shrimp till its pink.
(Some recipes boil the shrimp instead. I like to cook it with garlic and salt because it just tastes so much better!)
3. Cut the shrimp in half (Make it easier to roll)
4. Get all the fillings ready for the wrap.
5. Soak the wrapper in a pan for about 2 min till it gets soft (Do not soak it for too long-it will break and make sure you soak it one at a time-they will stuck together if you do multiples) !
6. Start wrapping! Lay a sheet of softened wrapper on the cutting board. Put shrimp down first. Pink side down.
7. Lay all the other ingredients on top of the shrimp.
8. Now fold it Asian Mama Mia Way!
- Fold two sides to the middle.
- Fold down the top part.
- Tightly roll it forward and you are done!
9. Now repeat the process and start rolling the next one. (Tip: soak one sheet of spring wrapper in the pan while you are rolling the spring roll. By the time you are done rolling, your next sheet of wrapper will be ready for you to roll!)
The Sauce
- Just mix everything up together! This sauce is not only great for spring roll, but also great to use as salad dressing!
3/4 Cup of peanut butter
1/3 Cup of water
3 Tbsp of Hoisin sauce
2 Tbsp of lime juice
2 Tbsp of soy sauce
1 tsp of garlic powder
1 tsp of sesame oil
1 tsp of chile pepper sauce (optional)
Now dip the spring roll in your peanut sauce and enjoy your meal! Yes, food can be yummy and healthy the same time!
Some people may wonder why there's no basil or mint in this spring roll. Well, basil and mint are just not one of those things that I always have in my fridge. Cooking is all about using what you like and what you have. You can basically use anything you can think of in the spring roll as long as you like/have it !
